do we know what a stock bottom end 2.3L can take? say a stock 2.3L altogether. mabe 500 fwh.

A totaly stock bottom end can take quite a bit of power. I thought i heard some guys making 400+ hp on TurboFord.
I am running a stock bottom end and its holding up fine so far.
The stock pistons however can't take too much abuse.

With a stock turbo motor from any turbo coupe or SVO. You will need to do head work and use a big cam.
I have heard of 511RWHP from a stock turbo motor.
400-430RWHP from a lot of different guys and that is with running close to 30PSI of boost.
I don't think you can do enough mods with a N/A 2.3 to reach its breaking point, unless you are spinning 10,000 rpm.
But, I assume you meant stock 2.3T bottom end. Jess is right, its been done on Turboford to the tune of 511RWHP being blown on very very hard. This was only done on the dyno though and not street driven, so no longevity reports to brag about. Consensus though was that it would not last very long at all that way.
If you replace the rod bolts, but kept the stock crank, rods, and pistons then 400-450HP should be very reliable given a proper tune.

ya i couldnt find the u tube vid but theres a 23T makin like 535hp on the engine dyno.crazy!
